Ingredients

8 servings
Whole wheat flour (wholemeal atta flour, chapati flour)3½ cups atta, plus wheat bran or atta for dusting
Maida (all-purpose flour, plain flour)¾ cup
Instant dry yeast1½ tsp
Sugar1 tsp
Salt1½ tsp
Water1⅓ cups, warm

Method

4 steps
  1. 1Mix flours, yeast, sugar, salt and water and knead 10 minutes into a soft dough. Rise 1 1/2 hours.
  2. 2Divide into 8, roll into balls, then flatten to 1 cm discs. Coat well in bran.
  3. 3Rest 30 minutes on a floured tray.
  4. 4Bake on a hot tray at 240 C for 8 to 10 minutes.
Serve it like this

Split the pocket and fill with chorizo, potato bhaji or butter. Serve warm with chai.
