Ingredients

4 servings
Amaranth leaves2 bunches red amaranth, chopped
Onion1 small, chopped
Garlic5 cloves, crushed
Dried red chilli1, broken
Fresh grated coconut½ cup
Coconut oil1 tbsp
Saltto taste

Method

3 steps
  1. 1Wash the amaranth well and chop leaves and tender stems.
  2. 2Heat coconut oil, fry garlic and chilli, add onion and cook until soft.
  3. 3Add amaranth and salt and cook uncovered until wilted, 4 to 5 minutes. Stir in coconut.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
