Classic godhi payasa.

Ingredients

6 servings
Broken wheat (cracked wheat)½ cup
Ghee1½ tbsp
Water1⅔ cups
Jaggery¾ cup, grated
Thin coconut milk1¼ cups
Thick coconut milk½ cup
Cardamom½ tsp
Cashewsa few
Raisins1 tbsp

Method

5 steps
  1. 1Roast the broken wheat in 2 tsp ghee until fragrant.
  2. 2Pressure cook with the water for 4 whistles. Let the pressure release naturally.
  3. 3Add jaggery and thin coconut milk and simmer, stirring, until slightly thick.
  4. 4Turn heat low, stir in the thick coconut milk and cardamom and warm through without boiling.
  5. 5Fry cashews and raisins in the rest of the ghee and pour over.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
