Ingredients

4 servings
Sweet potato2 medium, chunks
Cooking oil (vegetable oil)for frying, about 60 g absorbed
Sugar⅓ cup
Water1 tbsp
Salta pinch
Sesame seeds2 tsp, black if you have them

Method

4 steps
  1. 1Cut sweet potatoes into irregular chunks, soak 10 minutes and dry well.
  2. 2Fry at 160 C for 6 minutes, then at 180 C for 2 minutes.
  3. 3Melt sugar with water and salt in a pan without stirring until pale amber.
  4. 4Toss the hot sweet potato in the syrup, add seeds and spread on an oiled tray to cool.
Serve it like this

Serve on a plate while the shell is still glassy, black sesame on top, with cold milk or tea.
