Rolled oats (porridge oats)2 cups
Almonds⅓ cup, chopped
Peanut butter½ cup
Honey⅓ cup plus 1 tbsp
Dates8, chopped
Raisins¼ cup
Flax seeds (linseed)2 tbsp

Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tspMethod
- 1Toast the oats and almonds in a dry pan for 6 to 8 minutes.
- 2Warm the peanut butter and honey together until runny. Stir in vanilla and salt.
- 3Mix the oats, almonds, dates, raisins and flax with the binder.
- 4Press very firmly into a lined 8 inch tin with the back of a cup.
- 5Chill 1 hour, then cut into 12 bars.
Serve it like thisWrap bars individually in baking paper for tiffin boxes, or serve with a glass of milk or a banana for breakfast.
