Cucumber2, chunked
Tomato3, wedges
Onion1 red onion, sliced
Capsicum (green capsicum, green bell pepper)1, sliced
Black olives⅓ cup
Paneer120 g, cubed, or feta
Olive oil2 tbsp
Lemon juice1 tbsp
Dried mixed herbs (italian seasoning)1 tsp oregano
Black pepper¼ tsp
Saltto taste

Method

3 steps
  1. 1Chunk the cucumber, tomato, onion and capsicum into big pieces.
  2. 2Whisk olive oil, lemon, oregano, pepper and salt.
  3. 3Toss vegetables and olives with dressing, top with paneer and a pinch more oregano.
