Ingredients

8 servings
Maida (all-purpose flour, plain flour)2½ cups
Rava (semolina)¼ cup, for rolling
Water¾ cup
Instant dry yeast1 tsp
Olive oil3 tbsp
Salt1 tsp, plus flaky salt
Sesame seedsoptional, for coating

Method

3 steps
  1. 1Knead flour, water, yeast, oil and salt into a smooth dough. Rest 1 hour.
  2. 2Cut strips and roll or stretch into long thin sticks. Roll in semolina and sesame.
  3. 3Bake at 200C for 15 to 18 minutes until golden and crisp.
Serve it like this

Stand them in a tall glass on the table, with some wrapped in prosciutto and a bowl of dip alongside.
