Ingredients

4 servings
Prawns (shrimp)450 g large prawns, peeled
Egg white1 egg white
Cornflour (cornstarch)⅓ cup
Cooking oil (vegetable oil)for frying (about 3 tbsp absorbed)
Walnuts¾ cup halves
Sugar¼ cup
Mayonnaise¼ cup
Condensed milk (sweetened condensed milk)2 tbsp
Honey1 tbsp
Lemon juice2 tsp
Salta pinch

Method

5 steps
  1. 1Simmer sugar with 1/4 cup water until syrupy, add walnuts and stir 2 minutes, then spread on oiled paper.
  2. 2Whisk mayonnaise, condensed milk, honey and lemon juice.
  3. 3Toss prawns with salt and egg white, then cornflour.
  4. 4Fry in hot oil in batches until crisp and pale gold.
  5. 5Drain, toss quickly with the sauce, top with walnuts and serve.
Serve it like this

Pile on a white platter, scatter candied walnuts over and add a few steamed broccoli florets around the edge. Serve hot.
