Ingredients

6 servings
Maida (all-purpose flour, plain flour)3¼ cups
Curd (plain yogurt, natural yoghurt)1 cup (or matsoni)
Egg2 (1 for dough, 1 for filling)
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Butter3½ tbsp, melted, divided
Sugar1 tsp
Salt1 tsp
Mozzarella2½ cups grated
Feta cheese1½ cups crumbled (or imeruli cheese)

Method

5 steps
  1. 1Stir the soda into the curd until it foams. Add one egg, 30 g melted butter, sugar, salt and the flour and knead briefly into a soft dough. Rest 20 minutes.
  2. 2Mix the mozzarella, feta and the second egg into a firm ball of filling.
  3. 3Halve the dough and the filling. Pat a dough half into a 20 cm disc, set the cheese ball in the middle and gather the edges up like a pouch. Pinch shut, flip and gently press flat to 25 cm.
  4. 4Cook in a dry heavy pan on low heat, covered, until the underside is spotted gold. Flip and cook the other side.
  5. 5Brush with the remaining butter, stack, and cut into wedges like a pizza.
Serve it like this

Cut into 8 wedges on a board while hot, cheese still stretchy. Serve with a bowl of herbs, radishes and tomatoes.
