Rajma, dry (dried red kidney beans)1¼ cups dry, soaked overnight
Onion1 large, chopped
Cooking oil (vegetable oil)2 tbsp
Garlic3 cloves
Walnuts½ cup
Khmeli suneli1½ tsp
Red chilli powder (indian red chili powder)½ tsp
Vinegar2 tsp (or tkemali)
Coriander leaves (cilantro)big handful, chopped

- 1Drain the soaked beans and boil in fresh water until completely soft.
- 2Fry the onion in oil until soft and golden.
- 3Pound the walnuts, garlic and a pinch of salt to a coarse paste.
- 4Mash about half the beans in their pot. Stir in the onion, walnut paste, khmeli suneli, chilli and vinegar and simmer 10 minutes.
- 5Stir in the coriander, taste for salt and vinegar and rest 5 minutes.
Serve it like thisServe bubbling hot in small clay pots or bowls, scattered with coriander. Mchadi and pickles go alongside.
