Ingredients

Sweet potato glass noodles (glass noodles, cellophane noodles)200 g sweet potato glass noodles
Beef150 g, in thin strips
Soy sauce3 tbsp, divided
Sugar1½ tbsp, divided
Sesame oil5 tsp, divided
Garlic5 cloves, minced, divided
Black peppera pinch
Spinach1 small bunch
Egg1
Cooking oil (vegetable oil)1½ tbsp
Onion1, sliced
Carrot1, in matchsticks
Button mushroom100 g, sliced
Capsicum (green capsicum, green bell pepper)½ red or green, in strips
Saltto taste
Sesame seeds1 tbsp

Method

5 steps
  1. 1Marinate the beef with 1 tbsp soy, 1 tsp sugar, 1 tsp sesame oil, a little garlic and pepper.
  2. 2Cook the noodles for 6 minutes until chewy, drain, cut a few times with scissors and toss with 1 tsp sesame oil and 1 tbsp soy.
  3. 3Blanch the spinach, squeeze and season with salt, garlic and sesame oil. Cook the egg as a thin omelette and slice into strips.
  4. 4Stir fry onion, carrot, mushroom and capsicum separately with a pinch of salt in a little oil. Fry the beef until cooked through.
  5. 5Toss everything together with the remaining soy, sugar, sesame oil and garlic. Top with sesame seeds.
Serve it like this

Pile into a wide shallow bowl or platter with egg ribbons and sesame on top. Serve warm or at room temperature.
