Ingredients

Potato3 large
Cooking oil (vegetable oil)2 tbsp, or ghee
Cumin seeds2 tsp
Asafoetidaa pinch
Green chilli2, chopped
Ginger1.5 cm, grated
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Coriander powder (ground coriander)1 tsp
Dry mango powder½ tsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

5 steps
  1. 1Boil the potatoes in their skins until just tender. Cool, peel and cut into cubes.
  2. 2Heat the oil and add cumin and asafoetida.
  3. 3Add green chilli and ginger, then turmeric, chilli and coriander powder. Tip in the potatoes and salt right away.
  4. 4Spread the potatoes out and leave them alone before tossing. Repeat a few times.
  5. 5Finish with amchur and coriander leaves.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
