Ingredients

Onion2 medium, finely chopped
Tomato2 medium, pureed
Ginger garlic paste1 tbsp
Green chilli2, slit
Cumin seeds1 tsp
Bay leaf (indian bay leaf)1
Turmeric (ground turmeric)½ tsp
Kashmiri chilli powder2 tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Cooking oil (vegetable oil)3 tbsp
Coriander leaves (cilantro)a handful

Method

6 steps
  1. 1Boil the eggs for 10 minutes, cool them in cold water and peel. Make a few shallow slits on each.
  2. 2Fry the eggs in a spoon of the oil with a pinch of turmeric and chilli until blistered. Set aside.
  3. 3In the remaining oil, add cumin and bay leaf, then the onion. Cook until deep golden.
  4. 4Add ginger garlic paste and green chilli, then the tomato, turmeric, chilli and coriander powder. Cook until the oil separates.
  5. 5Add 1 1/2 cups hot water and salt. Simmer 5 minutes, add the eggs and simmer 5 more.
  6. 6Finish with garam masala and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
