Classic jungli maas.

Ingredients

4 servings
Mutton (goat meat)800 g, curry cut
Ghee⅓ cup
Dried red chilli12 to 15, whole
Saltto taste
Water2½ cups
Garlic8 cloves, optional

Method

3 steps
  1. 1Heat the ghee in a heavy pot, add the whole chillies and garlic and fry 30 seconds.
  2. 2Add the mutton and salt. Fry on medium high, stirring, for 15 minutes.
  3. 3Add water a little at a time and cook covered on low heat for 1 1/2 hours, adding a splash of water whenever it dries, until the meat is very tender.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
