Raw jackfruit (young green jackfruit)500 g tender jackfruit, cubed
Fresh grated coconut1 cup
Dried red chilli5 byadgi chillies
Urad dal (split black gram)1 tsp
Coriander seeds1 tsp
Tamarinda small piece
Jaggery1 tsp
Coconut oil1½ tbsp
Mustard seeds½ tsp
Curry leavesa sprig
Turmeric (ground turmeric)a pinch

- 1Oil your hands and knife and cut the jackfruit into small cubes, removing the tough skin.
- 2Pressure cook the cubes with turmeric, salt and water for 2 whistles.
- 3Roast urad dal, chillies and coriander in a drop of oil and grind coarsely with coconut and tamarind.
- 4Temper mustard and curry leaves in coconut oil, add jackfruit, masala and jaggery and toss on low heat until dry.
