Classic Egyptian kahk.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups plus 2 tbsp
Ghee1¼ cups samna or ghee, melted
Milk½ cup, warm
Sugar2 tbsp in dough, rest icing sugar for dusting
Sesame seeds1 tbsp, toasted
Instant dry yeast1 tsp
Baking powder1 tsp
Fennel seeds1 tsp kahk spice or ground aniseed
Honey⅓ cup, for the filling
Salta pinch

Method

4 steps
  1. 1Rub hot melted ghee into the flour, sesame and spice until sandy. Cool, then add yeast, baking powder, sugar and warm milk and knead briefly.
  2. 2Cook honey with a spoon each of flour and ghee to a thick filling (ajameya). Cool.
  3. 3Shape walnut sized balls, press in a little filling, close and stamp with a kahk mould or pinch patterns with tongs.
  4. 4Bake at 180 C until the bases are pale gold. Cool and dust heavily with icing sugar.
Serve it like this

Pile on a platter in a snowy heap of icing sugar and serve with tea or Turkish coffee on Eid morning.
