Ingredients

4 servings
Water3 cups
Sugar¼ cup
Honey¼ cup
Whole spices4 green cardamom, 1 inch cinnamon
Saffrona pinch
Pear4 firm pears
Lemon juice1 tbsp
Tea leaves (black tea leaves)2 tsp green tea
Crème fraîche½ cup
Cardamoma pinch
Almonds¼ cup, slivered and toasted

Method

  1. 1Simmer the water, sugar, honey, spices and saffron on medium heat for 5 minutes.
  2. 2Peel the pears, keep the stalks, slice a thin piece off each base and toss in the lemon juice.
  3. 3Lower the pears into the syrup. Cover and poach at a gentle simmer for 20 to 25 minutes, turning once.
  4. 4Lift out the pears. Steep the green tea in 100 ml of syrup off the heat for 3 minutes, strain back in, then boil 10 minutes to reduce by two thirds.
  5. 5Whisk the crème fraîche with the cardamom powder. Serve each pear with syrup, a spoon of cream and toasted almonds.
Serve it like this

Stand a pear upright in a shallow bowl and pour the glossy syrup around it. Quenelle the cream beside it and scatter almonds and saffron.
