Ingredients

Chickpeas, boiled2½ cups, boiled, warm
Tahini6 tbsp
Lemon juice3 tbsp
Garlic2 cloves
Saltto taste
Water4 tbsp, ice cold
Fresh grated coconut2 tbsp
Coconut oil2 tbsp
Mustard seeds1 tsp
Urad dal (split black gram)1 tsp
Curry leaves2 sprigs
Dried red chilli2, broken
Asafoetidaa pinch
Ginger1 tsp, finely chopped
Kashmiri chilli powder¼ tsp
Pita bread3, warmed, in wedges
Cucumber1, in sticks
Carrot2, in sticks

Method

5 steps
  1. 1Blend the warm chickpeas with the tahini, lemon, garlic and salt for 2 minutes. With the motor running, add the cold water and blend 2 minutes more.
  2. 2Toast the coconut in a dry pan on low heat for 2 minutes and set aside.
  3. 3Heat the coconut oil on medium heat. Add the mustard seeds and let them pop, then the urad dal until golden, then curry leaves, red chilli, asafoetida and ginger for 30 seconds. Off the heat, stir in the chilli powder.
  4. 4Swirl the hummus into a shallow bowl with a deep well in the middle. Pour in the hot tadka and scatter the coconut.
  5. 5Serve with warm pita, cucumber and carrot sticks.
Serve it like this

Swirl the hummus with the back of a spoon into rings, pour the tadka into the centre, and stand pita wedges and vegetable sticks upright in a cup beside it.
