Ingredients

6 servings
Bulgur (bulgur wheat)1 cup fine bulgur, soaked
Minced mutton (goat mince, ground goat)450 g lean lamb mince (300 g shell, 150 g filling)
Onion2 (1 grated for shell, 1 chopped for filling)
Almonds3 tbsp, or pine nuts
Baharat2 tsp
Cinnamon¼ tsp
Saltto taste
Cooking oil (vegetable oil)for deep frying (about 1/4 cup absorbed)

Method

4 steps
  1. 1Soak the bulgur 15 minutes, squeeze very dry. Grind with 300 g lamb, grated onion, half the baharat and salt into a smooth dough.
  2. 2For the filling, fry the chopped onion, then the rest of the lamb, nuts, cinnamon and baharat until browned and dry.
  3. 3With wet hands, shape a ball, hollow it with a finger into a thin cup, fill and seal into a torpedo.
  4. 4Deep fry in batches at medium high until deep brown. Drain.
Serve it like this

Pile on a platter with lemon wedges, a bowl of cool yoghurt or cacık and some fresh mint. Serve hot or warm.
