Burdock root1 root, in matchsticks, or more carrot and lotus stem
Carrot1, in matchsticks
Sesame oil2 tsp
Dried red chilli1, sliced
Soy sauce1 tbsp plus 1 tsp
Sugar2 tsp (or mirin)
Water2 tbsp
Sesame seeds1 tsp

Method

4 steps
  1. 1Scrub the burdock, cut into matchsticks and soak in water 5 minutes.
  2. 2Stir fry the drained burdock, carrot and chilli in sesame oil for 3 minutes.
  3. 3Add soy, sugar and water and toss until the liquid is gone.
  4. 4Finish with sesame seeds.
Serve it like this

Heap in a small bowl and serve at room temperature as one of the sides with rice, soup and grilled fish.
