Ingredients

4 servings
Maida (all-purpose flour, plain flour)3¼ cups
Instant dry yeast2 tsp
Sugar1½ tsp
Olive oil1½ tbsp
Saltto taste
Water1 cup warm
Minced mutton (goat mince, ground goat)300 g lamb or mutton mince
Onion1, finely chopped
Tomato2, finely chopped
Capsicum (green capsicum, green bell pepper)½ green capsicum, chopped
Flat leaf parsleya handful
Kashmiri chilli powder1 tsp, or pul biber
Black pepper¼ tsp
Butter1½ tbsp, melted

Method

4 steps
  1. 1Make a soft dough with flour, yeast, sugar, salt, oil and water. Knead and let it rise until doubled.
  2. 2Mix the raw mince with onion, tomato, capsicum, parsley, chilli, pepper and salt.
  3. 3Divide into 4, roll into long ovals, spread filling down the middle, fold the edges over and pinch the ends into boat shapes.
  4. 4Bake at 240 C on a hot tray until the crust is golden and the meat cooked through. Brush edges with butter.
Serve it like this

Cut each pide into strips across the boat, brush edges with butter and serve with ayran and a lemon wedge.
