Ingredients

Maida (all-purpose flour, plain flour)2½ cups

Ghee½ cup, melted

Milk⅓ cup, warm

Sugar2 tbsp

Instant dry yeast1 tsp

Cardamom1 tsp

Nigella seeds1 tsp

Dates300 g, pitted

Egg1 yolk, for wash

Sesame seeds1 tbsp

Method

4 steps

1Rub the melted ghee into the flour, then add sugar, yeast, cardamom, nigella, salt and warm milk. Knead into a soft dough and rest 30 minutes.
2Warm the dates with a spoon of ghee and mash into a smooth paste.
3Roll the dough thin, spread with date paste, roll up tightly into a log and slice into 1 cm rounds.
4Brush with egg yolk, sprinkle sesame and bake at 180 C until golden.

Serve it like this
