Ingredients

10 servings
Sugar1 cup
Water1¼ cups
Pandan leaves2, knotted
Rice flour1¼ cups
Tapioca starch1⅔ cups
Thick coconut milk1⅔ cups
Salta pinch

Method

5 steps
  1. 1Simmer the sugar, water and pandan into a syrup and cool.
  2. 2Mix the flours, coconut milk, salt and syrup into a thin batter and strain. Divide and colour half pink.
  3. 3Grease a tin and steam it hot. Pour in a thin layer of white batter and steam 5 minutes.
  4. 4Add a pink layer and repeat, alternating, until all the batter is used. Steam the last layer 20 minutes.
  5. 5Cool completely, at least 4 hours, before cutting with an oiled knife.
Serve it like this

Cut into diamonds and arrange on a plate so the stripes show. Serve with kopi or teh tarik.
