Ingredients

Chicken, curry cut (bone in chicken, small pieces)750 g, curry cut
Mustard oil3 tbsp
Cumin seeds½ tsp
Bay leaf (indian bay leaf)2
Onion1 large, chopped
Ginger garlic paste2 tbsp
Tomato2 medium, chopped
Turmeric (ground turmeric)1 tsp
Kashmiri chilli powder1½ tsp
Cumin powder (ground cumin)1 tsp
Coriander powder (ground coriander)1 tsp
Black pepper½ tsp, or timur
Garam masala½ tsp
Saltto taste
Water1¼ cups

Method

4 steps
  1. 1Heat mustard oil until smoking. Add cumin and bay leaves, then onion. Fry until golden.
  2. 2Add ginger garlic paste, tomato and the powdered spices. Cook until oil separates.
  3. 3Add the chicken and fry on high until it is coated and browned.
  4. 4Add water and salt, cover and simmer until the chicken is cooked through with no pink. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
