Beef short ribs, bone in800 g flanken cut short ribs
Soy sauce4½ tbsp
Sugar3 tbsp
Apple½ large, grated (Asian pear is traditional)
Onion1 small, grated
Garlic8 cloves, grated
Ginger1 tsp, grated
Sesame oil1 tbsp
Black pepper¼ tsp
Water⅓ cup plus 1 tbsp
Spring onion (green onion, scallion)2 stalks, sliced
Sesame seeds2 tsp
Lettuce1 head, for wrappingMethod
- 1Soak the ribs in cold water for 30 minutes and rinse off any bone dust.
- 2Mix soy, sugar, grated apple and onion, garlic, ginger, sesame oil, pepper and water.
- 3Marinate the ribs at least 4 hours or overnight.
- 4Grill or pan sear on high heat 2 to 3 minutes a side until caramelised and cooked through.
- 5Cut between the bones with scissors. Top with spring onion and sesame and serve with lettuce.
