Ingredients

Amaranth leaves1 large bunch red amaranth, chopped
Mustard oil1 tbsp
Garlic6 cloves, sliced
Dried red chilli2
Onion1 small, sliced, optional
Saltto taste

Method

3 steps
  1. 1Wash the leaves well and chop with the tender stems.
  2. 2Heat mustard oil until it smokes, cool slightly, add garlic and red chillies, then onion if using.
  3. 3Add the leaves and salt. Toss on high heat until just wilted.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
