Glutinous rice (sweet rice)1½ cups, soaked
Chicken, boneless250 g thigh, diced
Chinese sausage2 links, sliced
Dried shiitake mushrooms4, soaked and diced
Oyster sauce2 tbsp
Soy sauce1½ tbsp
Dark soy sauce2 tsp
Sesame oil1 tsp
Sugar1 tsp
Ginger1 thumb, minced
Shallots3, sliced
Cooking oil (vegetable oil)1 tbsp
Waterfor the riceMethod
- 1Soak the rice overnight. Marinate the chicken with half the sauces, ginger and sesame oil for 30 minutes.
- 2Steam the rice 25 minutes, then toss with the remaining sauces and a little water.
- 3Stir fry shallots, chicken, sausage and mushrooms until cooked through.
- 4Soak lotus leaves or use banana leaf. Layer rice, filling, rice and fold into parcels.
- 5Steam the parcels 30 minutes.
