Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups
Cornflour (cornstarch)2 tbsp
Instant dry yeast1½ tsp
Sugar1 tbsp
Curd (plain yogurt, natural yoghurt)3 tbsp
Cardamom½ tsp
Saffrona pinch, soaked
Water1 cup warm
Cooking oil (vegetable oil)for deep frying (about 1/2 cup absorbed)
Date syrup⅓ cup
Sesame seeds1 tsp, toasted

Method

4 steps
  1. 1Mix flour, cornflour, yeast, sugar, cardamom, saffron, curd and warm water into a thick, smooth batter.
  2. 2Cover and rest until doubled and bubbly.
  3. 3Squeeze small balls of batter through your fist and drop into medium hot oil. Fry, turning, until deep golden.
  4. 4Drain and toss with date syrup and sesame while hot.
Serve it like this

Pile in a bowl, drizzle more date syrup and scatter sesame. Serve warm with gahwa or karak chai.
