Broken wheat (cracked wheat)1½ cups harees wheat or coarse dalia, soaked
Mutton (goat meat)500 g lamb or mutton, on the bone
Ghee3 tbsp, plus more to serve
Cinnamon1 stick
Whole spices3 cardamom

Water8 cupsMethod
- 1Pressure cook the lamb with cinnamon, cardamom, salt and 3 cups water for 6 whistles. Release naturally.
- 2Remove bones. Add the soaked wheat and the rest of the water. Pressure cook another 6 whistles, then let it release naturally.
- 3Simmer uncovered and beat hard with a wooden masher or whisk until smooth and stretchy.
- 4Serve with a well of hot ghee on top and a pinch of cinnamon.
