Ingredients

12 servings
Rava (semolina)3 cups fine semolina
Olive oil½ cup, for the dough
Waterwarm, as needed
Salta pinch
Datesdate paste or soft dates, pitted
Cinnamon powder2 tsp
Orange blossom water (orange flower water)1½ tbsp
Cooking oil (vegetable oil)for frying (about 80 ml absorbed)
Sugar¾ cup, for syrup
Honey⅓ cup
Lemon juice2 tsp
Sesame seedsto finish

Method

4 steps
  1. 1Rub the semolina with the olive oil and salt until every grain is coated, then rest 30 minutes. Bind with warm water to a soft dough without kneading.
  2. 2Knead the dates with cinnamon and orange blossom water into a smooth paste and roll into logs.
  3. 3Flatten dough into a long strip, lay a date log down the middle, fold over, roll into a log, press a pattern on top and cut into diamonds.
  4. 4Simmer sugar with a little water, honey and lemon for 5 minutes. Fry the diamonds at 170 C until golden and dip into warm syrup.
Serve it like this

Stack the diamonds on a plate, sprinkle sesame and serve at room temperature with mint tea or black coffee.
