Ingredients

Mutton (goat meat)750 g, small pieces
Onion2, sliced
Ginger garlic paste2 tbsp
Red chilli powder (indian red chili powder)1 tbsp
Coriander powder (ground coriander)1 tbsp
Garam masala1½ tsp
Black pepper1½ tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)3½ tbsp
Curry leaves2 sprigs
Coriander leaves (cilantro)a handful
Water¾ cup
Saltto taste

Method

4 steps
  1. 1Pressure cook mutton with turmeric, half the ginger garlic, salt and water for 5 whistles. Let the pressure release naturally.
  2. 2Fry onion in oil until deep brown, add remaining ginger garlic and curry leaves.
  3. 3Add chilli, coriander and garam masala, then the mutton with its stock.
  4. 4Roast on medium, stirring, until dry and the pieces are dark and crisp edged. Finish with pepper and coriander.
Serve it like this
