Ingredients

4 servings
Maida (all-purpose flour, plain flour)2 cups
Egg1
Water⅓ cup
Saltto taste
Minced mutton (goat mince, ground goat)200 g lamb mince
Onion1 small, grated
Flat leaf parsleya handful
Curd (plain yogurt, natural yoghurt)1⅔ cups
Garlic2 cloves, crushed
Butter3 tbsp
Kashmiri chilli powder1½ tsp, or pul biber
Mint leaves1 tsp dried mint

Method

5 steps
  1. 1Knead the flour, egg, water and salt into a firm, smooth dough. Rest 30 minutes.
  2. 2Mix the mince with grated onion, parsley and salt.
  3. 3Roll the dough very thin, cut into 3 cm squares, add a pea sized blob of filling and pinch the corners together.
  4. 4Boil in salted water until they float and the dough is tender.
  5. 5Spoon garlic yoghurt over the drained mantı and pour over butter sizzled with chilli and dried mint.
Serve it like this

Spoon dumplings into shallow bowls, cover with garlic yoghurt and drizzle red butter. Serve hot.
