Classic Afghan mantu.

Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Waterabout 1/2 cup plus for steaming
Minced mutton (goat mince, ground goat)400 g lamb or beef mince
Onion2, very finely chopped
Coriander powder (ground coriander)1 tsp
Black pepper1 tsp
Hung curd (greek yogurt)1 cup thick yoghurt (chaka)
Garlic2 cloves, crushed
Mint leaves1 tsp dried mint
Chana dal (split chickpeas)⅓ cup split peas, soaked
Tomato puree¼ cup
Cooking oil (vegetable oil)1½ tbsp
Red chilli powder (indian red chili powder)1 tsp
Saltto taste

Method

6 steps
  1. 1Knead flour, salt and water into a firm dough. Rest 30 minutes.
  2. 2Mix mince with onion, coriander, pepper and salt.
  3. 3Roll the dough very thin, cut 3 inch squares, fill and pinch opposite corners together into parcels.
  4. 4Steam on oiled racks until the filling is cooked through.
  5. 5Meanwhile simmer split peas with tomato puree, oil, chilli and salt until soft and saucy. Mix yoghurt with garlic and salt.
  6. 6Spread yoghurt on a platter, add mantu, top with more yoghurt and the pea sauce, then dried mint.
Serve it like this

Lay on a white platter on garlicky yoghurt, spoon red split pea sauce over and finish with dried mint and chilli.
