Ingredients

Chicken, boneless2 large breasts, halved into cutlets

Maida (all-purpose flour, plain flour)2 tbsp

Olive oil1½ tbsp

Butter1 tbsp

Garlic4 cloves, minced

Sun dried tomatoes⅓ cup, chopped

Chicken stock (chicken broth)¾ cup

Fresh cream (thickened cream, heavy cream)¾ cup

Parmesan½ cup, grated

Dried oregano½ tsp

Red chilli powder (indian red chili powder)a pinch of chilli flakes

Basil leavesa handful

Method

5 steps

1Season the cutlets and dust with flour.
2Sear in oil and butter 4 to 5 minutes a side until golden and cooked through with no pink. Lift out.
3Fry garlic and sun dried tomatoes 1 minute, then add stock and scrape the pan.
4Add cream, parmesan, oregano and chilli and simmer until thick.
5Return the chicken and juices, spoon sauce over and finish with basil.
