Rice1½ cups short grain rice, soaked overnight
Cooked rice½ cup
Instant dry yeast1½ tsp
Sugar3 tbsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Salt½ tsp

- 1Blend the soaked rice, cooked rice and yeast with just enough water to make a thick, smooth batter.
- 2Cover and ferment in a warm spot until bubbly and risen, 6 to 8 hours or overnight.
- 3Stir in sugar, salt and baking soda.
- 4Oil the wells of a masa or aebleskiver pan, fill with batter, cover and cook on low, then flip.
Serve it like thisServe hot in a stack with honey or sugar, or with a peppery soup and a sprinkle of suya spice.
