Ingredients

4 servings
Sweet corn kernels (corn kernels)4 cobs, husked
Butter1½ tbsp, melted
Lemon juice1 lemon, halved
Red chilli powder (indian red chili powder)½ tsp
Chaat masala1 tsp
Black salt½ tsp
Salta pinch

Method

3 steps
  1. 1Roast the cobs directly over a medium gas flame or charcoal, turning often, until charred in patches. Or air fry at 200°C for 12 minutes, turning once.
  2. 2Mix chilli powder, chaat masala and both salts on a plate.
  3. 3Dip the lemon half in the masala and rub it hard all over the hot cob, then brush with butter.
Serve it like this

Serve on the cob, wrapped in its husk or a paper napkin, with lemon halves for an extra squeeze.
