Ingredients

6 servings
Peanuts1¾ cups, raw with skin
Besan (chickpea flour, gram flour)½ cup
Rice flour2 tbsp
Red chilli powder (indian red chili powder)1½ tsp
Turmeric (ground turmeric)¼ tsp
Ginger garlic paste2 tsp
Asafoetidaa pinch
Curry leaves1 sprig
Chaat masala1 tsp
Saltto taste
Water2 tbsp, sprinkled
Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed

Method

4 steps
  1. 1Toss peanuts with besan, rice flour, chilli, turmeric, ginger garlic, asafoetida and salt.
  2. 2Sprinkle water a little at a time, tossing, until a thin coat clings to each nut.
  3. 3Fry in batches on medium heat, separating clusters, until crisp.
  4. 4Fry curry leaves, toss with the peanuts and chaat masala; cool completely.
Serve it like this

Serve in small bowls or paper cones. Room temperature.
