Dried white peas¾ cup, soaked overnight
Onion1 large, half cooked and half raw
Tomato1, chopped
Ginger garlic paste2 tsp
Mint leavesa handful
Coriander leaves (cilantro)a handful

Garam masala1 tsp
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)¼ tsp
Cooking oil (vegetable oil)1 tbsp

- 1Pressure cook the peas with turmeric, salt and water, 4 whistles. Let pressure release naturally.
- 2Grind half the onion, tomato, mint, coriander, chillies and a ladle of peas to a paste.
- 3Heat oil, add ginger garlic paste, the paste, chilli powder and garam masala. Add the remaining peas and water. Simmer till thin and saucy.
- 4Crush puris into bowls, pour hot masala over, and top with raw onion, carrot, coriander, sev and lemon.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
