Classic Parsi mawa cake.

Ingredients

12 servings
Khoa¾ cup, crumbled
Butter½ cup, softened
Sugar¾ cup, powdered
Egg3
Maida (all-purpose flour, plain flour)1¼ cups
Baking powder1¼ tsp
Milk¼ cup
Cardamom1 tsp
Almonds2 tbsp, slivered
Salta pinch

Method

5 steps
  1. 1Heat the oven to 175 C and grease a 12 cup muffin tray or small fluted moulds. Cream butter and sugar, then beat in the khoa.
  2. 2Beat in the eggs one at a time with the cardamom.
  3. 3Fold in the maida, baking powder and salt with the milk.
  4. 4Fill the moulds two thirds full, top with almond slivers and bake 20 to 25 minutes.
  5. 5Cool in the tray 10 minutes, then unmould.
Serve it like this

Serve the little cakes whole in paper cases, slightly warm, with milky Irani chai or bun maska alongside.
