Ingredients

8 servings
Maida (all-purpose flour, plain flour)3¼ cups
Instant dry yeast2 tsp
Sugar3 tbsp
Salt1 tsp
Milk powder (powdered milk)1 tbsp
Milk1 cup, warm
Butter40 g for dough, 100 g for maska

Method

4 steps
  1. 1Mix flour, yeast, sugar, salt and milk powder with the milk and knead 8 minutes. Work in 40 g butter.
  2. 2Rise 1 hour, shape 8 smooth round buns and rise 40 minutes on a tray.
  3. 3Brush with milk and bake at 190 C for 15 to 18 minutes.
  4. 4Cool slightly, split and spread thickly with softened butter, adding a sprinkle of sugar if you like.
Serve it like this

Split warm buns, spread thick with butter, and serve on a small plate with a glass of Irani chai for dunking.
