Ingredients

4 servings
Besan (chickpea flour, gram flour)1¼ cups coarse besan
Rava (semolina)2 tbsp
Fenugreek leavesa big bunch, chopped
Green chilli2, chopped
Ginger1.5 cm, grated
Coriander seeds1 tsp, crushed
Black pepper½ tsp, crushed
Sugar1 tsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Wateras needed
Cooking oil (vegetable oil)for frying
Saltto taste

Method

4 steps
  1. 1Mix besan, rava, methi, chilli, ginger, coriander, pepper, sugar and salt.
  2. 2Add water to make a thick batter and beat well. Add soda with a spoon of hot oil.
  3. 3Drop small portions into medium hot oil.
  4. 4Fry till golden and serve with kadhi or chutney.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
