Classic Nigerian fried rice.

Per serving, worked out from the ingredient table.

Ingredients

5 servings
Basmati rice2 cups
Carrot1, diced
Green beansdiced
Green peas½ cup
Sweet corn kernels (corn kernels)½ cup
Prawns (shrimp)150 g
Curry powder2 tsp
Dried thyme1 tsp
Stock cube (bouillon cube)1 cube
Onion1, chopped
Spring onion (green onion, scallion)3, sliced
Butter2 tbsp
Cooking oil (vegetable oil)2 tbsp
Water2½ cups stock
Saltto taste

Method

4 steps
  1. 1Cook the rice in stock with curry powder, thyme, cube and salt until just done.
  2. 2Sauté prawns in a little oil until pink. Lift out.
  3. 3Fry onion and vegetables in butter and oil on high until just tender.
  4. 4Add the rice in batches and toss. Return prawns and spring onion.
Serve it like this

Mound on a platter beside jollof, with fried chicken, plantain and coleslaw for a full party plate.
