Classic goat pepper soup.

Ingredients

4 servings
Mutton (goat meat)700 g goat meat with bone, cubed
Onion1, chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, blended
Black pepper1 tsp, crushed
Fennel seeds1 tsp, crushed
Whole spicespinch of nutmeg and 2 cloves (or pepper soup spice mix)
Ginger2.5 cm, grated
Garlic3 cloves
Tulsi leaves (holy basil)a handful (scent leaf traditionally)
Stock cube (bouillon cube)1 cube
Water6 cups
Saltto taste

Method

3 steps
  1. 1Rinse the goat, then simmer with onion, ginger, garlic, salt and stock cube in a little water for 10 minutes.
  2. 2Add the water, scotch bonnet and ground spices. Simmer covered until the meat is tender.
  3. 3Add the tulsi leaves and simmer 3 minutes. Adjust salt and pepper.
Serve it like this

Serve in deep bowls, piping hot, with boiled yam, white rice or bread on the side and a cold drink.
