Classic noon chai.

Ingredients

3 servings
Tea leaves (black tea leaves)1½ tbsp Kashmiri green tea leaves
Water3 cups, plus 1 cup ice cold water
Baking soda (bicarb soda, bicarbonate of soda)a small pinch
Whole spices2 cardamom pods and 1 star anise
Salt⅓ tsp, to taste
Milk1 cup, full cream
Almondsa few, crushed
Pistachiosa few, crushed

Method

4 steps
  1. 1Boil the tea leaves, baking soda and spices in 3 cups water until reduced by half.
  2. 2Pour in 1 cup ice cold water and whisk vigorously or aerate with a ladle for a few minutes.
  3. 3Add the milk and salt and simmer for 5 minutes, ladling to aerate.
  4. 4Serve topped with crushed almonds and pistachios.
Serve it like this
