Osaka style okonomiyaki.

Ingredients

2 servings
Maida (all-purpose flour, plain flour)¾ cup
Baking powder½ tsp
Salta pinch
Water½ cup cold dashi or water
Egg2
Cabbage¼ head, finely shredded
Spring onion (green onion, scallion)2 stalks, sliced
Cooking oil (vegetable oil)1 tbsp
Pork belly80 g, thinly sliced
Tonkatsu sauce2 tbsp okonomiyaki sauce
Mayonnaise1½ tbsp
Bonito flakesa handful
Nori sheetsa pinch, crumbled (for aonori)

Method

5 steps
  1. 1Whisk flour, baking powder, salt and dashi into a smooth batter. Beat in the eggs.
  2. 2Fold in the cabbage and spring onion until every shred is coated.
  3. 3Heat oil in a pan, spoon in half the mix and shape into a thick round. Lay pork slices on top.
  4. 4Cook on medium for 5 minutes until golden, flip, and cook 5 minutes more, pressing lightly once. Flip back.
  5. 5Brush with sauce, zigzag the mayo, and top with bonito and crumbled nori.
Serve it like this

Serve whole on a plate or griddle, sauce and mayo striped across, bonito dancing, cut into wedges at the table with a spatula.
