Chicken, boneless600 g boneless thigh or breast, cubed

Egg1

Cornflour (cornstarch)⅓ cup

Cooking oil (vegetable oil)3 tbsp

Orange2 oranges, zest and juice

Soy sauce1½ tbsp

Sugar3 tbsp

Vinegar1 tbsp

Garlic2 cloves

Ginger1.5 cm

Dried red chilli2, broken

Spring onion (green onion, scallion)2, sliced

Sesame seeds1 tsp

Method

4 steps

1Toss the chicken with egg and salt, then dredge in most of the cornflour.
2Shallow fry in the oil, or air fry at 200°C, until crisp and golden and cooked through with no pink remaining.
3In a pan, simmer the orange juice and zest, soy sauce, sugar, vinegar, garlic, ginger and chillies. Thicken with the remaining cornflour mixed with water.
4Toss the chicken in the glaze off the heat and top with spring onion and sesame.
