Ingredients

4 servings
Cooked rice3 cups, cooled
Water4 cups, boiled and cooled
Curd (plain yogurt, natural yoghurt)¾ cup, whisked
Saltto taste
Mustard oil2 tsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Dried red chilli1
Curry leaves1 sprig
Green chilli2, crushed
Gingera small piece, grated
Onion1 small, sliced, on the side

Method

4 steps
  1. 1Put the cooled rice in a clay or steel pot and cover with the boiled, cooled water. Cover and leave at room temperature overnight.
  2. 2Lightly crush a few grains with your hand. Stir in salt and the whisked curd.
  3. 3Heat the mustard oil. Add mustard seeds, cumin, red chilli, curry leaves and green chillies.
  4. 4Pour the tadka over, stir in the ginger and serve at room temperature with sliced onion and something fried on the side.
Serve it like this
