Ingredients

4 servings
Basmati rice1½ cups, soaked 20 minutes
Onion2 medium, thinly sliced
Sugar1 tbsp
Cooking oil (vegetable oil)2 tbsp
Ghee2 tsp
Whole spicescinnamon, cloves, cardamom, star anise
Bay leaf (indian bay leaf)2
Cumin seeds½ tsp
Saltto taste
Water2½ cups

Method

4 steps
  1. 1Heat oil and ghee, add sugar and let it melt and turn dark amber without stirring.
  2. 2Add the onions quickly and fry until deep brown, then the whole spices, bay leaves and cumin.
  3. 3Pour in hot water carefully and add salt. Bring to a boil.
  4. 4Add the drained rice, cover and cook on low until done, 12 to 15 minutes. Rest 5 minutes and fluff.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
