Raw banana (green plantain)1, cut into batons

Curd (plain yogurt, natural yoghurt)½ cup, sour
Coconut oil1½ tbsp

- 1Cut all the vegetables into batons about the length of your finger.
- 2Cook the yam, raw banana, drumstick and carrot with turmeric, salt and a splash of water, covered. Add beans and ash gourd after 5 minutes.
- 3Crush the coconut, green chillies and cumin coarsely, with no water.
- 4Add the coconut to the vegetables, toss gently and cook 3 minutes. Take off the heat and fold in the whisked curd.
- 5Pour the raw coconut oil over, scatter crushed curry leaves and cover for 5 minutes.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
