Ingredients

6 servings
Fish400 g salt cod, soaked, or fresh cod
Potato3, boiled in their skins
Onion1 small, finely chopped
Flat leaf parsleya handful, chopped
Egg3
Cooking oil (vegetable oil)for frying, about 100 g stays in
Whole spicesa pinch of nutmeg
Saltonly if needed
Black peppera few grinds

Method

5 steps
  1. 1Poach the soaked cod for 5 minutes, then flake very finely, removing skin and bones.
  2. 2Peel and mash the potatoes while warm. Mix with cod, onion, parsley, nutmeg and pepper.
  3. 3Beat in the eggs one at a time until the mixture is light.
  4. 4Shape into quenelles between two spoons.
  5. 5Fry in hot oil until deep golden. Drain.
Serve it like this

Pile on a plate with lemon wedges, or serve as a meal with tomato rice and green salad.
